Amazing Almond-Orange Cake

2 large organic oranges (Navel oranges are great, but any will do)
250 g almonds
6 good-sized eggs
200 g sugar (this makes a not-too-sweet cake. For sweeter results, use 250 g sugar.)
1 tsp. baking powder

Bring whole oranges (yes, with skin ON) to a boil and simmer for about 45 minutes as you pet the cat, snuggle your sweetie, check your email or begin assembling the other ingredients. (You can boil the oranges in a pot on the stove, or if they fit, put them in the simmering basket with about 1200 g water, for 45 minutes/100°C/speed 1-2. If the oranges are so large that the measuring cap won’t fit properly, just place it loosely on top, crooked is fine)
When oranges are soft and cooked, remove from water and cut open to cool. (remove any seeds)
Grind almonds for 10 seconds/speed 8.
Add sugar and baking powder and process for 3 seconds/speed 4.
Add orange pieces and mix for 6 seconds/speed 4.
Add eggs and process for 8 seconds/speed 4.
Pour batter into prepared cake tins. (I use cheesecake pans with parchment liners as shown in photo.)
Bake at 375°F (190° C) for about 45 minutes to 1 hour, depending on how big your pans are.
Cool completely in the pan.
Top with a dusting of icing sugar or you can use the Chocolate Hazelnut spread found in most Thermomix cookbooks.
